NM: I picked up a passion for baking between the volatile years of 17-21. My mom (and Grade 11 history teacher) used to bake the most mouth watering lemon cakes ever. The recipe I used is from a hand written chicken scrawl. In pink ink - not dated and origins unknown. A relatively easy recipe and no need to get hands on with the dough - a wooden spoon or less than par blender will do.
Consumed best straight from the oven with some good butter. Or butter & jam. Or butter & cheese.
Note: if you don't own a big enough cookie cutter then an average size drinking glass will do (easier to clean too).
